This cake, which originated in Italy, is often eaten at Easter and symbolizes the dove of peace. According to legend, two doves landed at the feet of the Milanese troops at the Battle of Legano in 1176. This was considered a divine sign. Even today, two doves are released at commemorative masses. Colomba is a rich cake with candied orange peel, almonds, and yeast dough. It`s reminiscent of panettone, but much denser. It`s delicious at a picnic or breakfast with jam and butter, or as a dessert.
