It is made from sheep`s milk from the Latxa breed. It is a hard cheese with a mild to medium tang. Idiazabal cheese originates from the Basque Country and Navarre. The name Idiazabal does not refer to the town of Idiazabal in the province of Gipuzkoa as the place of origin, but rather to the geographical center of the area where sheep`s milk cheese with similar characteristics is produced.
