TARTUFLANGHE - Bistro 75 - Cognac - Sweet Grape Must - Chutney
Cogna is a recipe with ancient origins, prepared on the old farms of the Langhe region. At the end of summer, the grape must from the first harvests is slowly cooked down and enriched with quince, Madernassa pears, walnuts, and hazelnuts to create a delicious compote that can be enjoyed throughout the winter. We also find it wonderful in summer with cheese and ham.
