DE - ECO - 001 Hay milk cheese from the Geifertshofen village cheese dairy. This specialty matures for at least 6 months in a brick-vaulted cellar. Here, it is regularly and carefully treated with salt water, allowing it to develop a reddish, sometimes rustic/wild natural rind, which imparts a tangy, spicy aroma with age. The cheese has a caramel-like texture and a few small, round holes. A fruity sweet wine or full-bodied, full-bodied red wines from the barriques go hand in hand - simply delicious.
