The organic Pecorino is made with thistle rennet instead of veal rennet, which is why it is of interest to conscious vegetarians. The sheep`s cheese matures for up to 3 months. It was made again for the first time 3 years ago by the Debbene brothers. They extract the rennet themselves from the thistle plant. The tradition dates back to ancient times. The taste of the cheese made from the milk of their own animals is long-lasting and reminiscent of herbs and vegetables. 51% fat in dry matter.
