The velvet effect is as interesting as its handling: The product only works when heated to approximately 45°C. A climate-controlled cabinet would be most suitable, but it also works in a water bath. The velvet effect is only achieved through a warm-cold reaction, by spraying the warm mixture onto frozen preparations. Cold surfaces alone are not sufficient to create the velvety texture-the surface must be below freezing.

Ingredients
60% cocoa butter, 40% dark chocolate (Ecuadorian cocoa, sugar, cocoa butter, emulsifier: sunflower lecithin), propellants: butane, propane. For food use. Store the product at room temperature (20-25°C) for at least 2 hours before use. Shake well before use. Spray an even layer of the product onto a cold surface from a distance of 20-25 cm. After use, turn the spray over and spray for a few seconds to clean the nozzle. Store at room temperature. If the product has been stored at a temperature of <20°C, place it in a water bath or drying cabinet (35°C) for about 20 minutes to liquefy the product before use.
