Heisei Ama Tsuyu soy sauce, Japan
Southern Japan is known for its sweet soy sauce. Most soy sauces, however, are sweetened with simple sugars and amino acids. This soy sauce is brewed exclusively from regional and natural products: rice and wheat from Kyushu (southern Japan), red rice wine, a specialty from Kumamoto, Fundodai`s hometown, and Wasanbon, a traditional Japanese cane sugar from Kagawa Province. The umami flavors of the sweet red rice wine and the minerals of the traditional sugar create a deep, complex flavor. A rare product, even in Japan.
