PT - BIO - 04 Thalassery, formerly Tellicherry, is located in the northwest of the Indian state of Kerala and lends its name to one of the very special and finest pepper varieties that India has to offer. Tellicherry pepper is made from fully ripe, red peppercorns, which are fermented and dried with all the pulp intact. This process turns the pepper black, but not jet black; rather, it has a pleasantly deep brown hue. This method also intensifies the aroma: the fully ripened peppercorns develop a distinctly nutty flavor, as well as a robust spiciness. This pepper is primarily used with dark meats such as game and beef, but also in chocolate desserts.
