Medium-fruity olive oil from Apulia, made from 100% Peranzana olives. Harvested from unripe olives. Good reasons? A distinctly harmonious, low-acid oil. Ideal as a finishing touch. Sensory profile: On the nose, aromas of fresh almonds and green tomatoes dominate, with a flavor profile characterized by soft notes. On the palate, soft, vegetal notes prevail. Exceptionally well-balanced flavor. Uses: Excellent with grilled meat and fish, and quick-cooked dishes. Seasons mozzarella, carpaccio, and bresaola with Parmesan. Pairs perfectly with fish and dishes requiring short cooking times.
