Borlotti, with their nutty taste and creamy consistency, are a delicious ingredient for minestrone and also pasta e fagioli. They are a pleasure on their own as an antipasto salad with very good extra virgin olive oil. They thrive particularly well at La Valletta at 800 m altitude.
