Available from the beginning of October. This tomato preservation, originally formulated as a winter stock, has an Arabic background. The Sicilian name means grinding and refers to the crushing of dried tomatoes combined with parsley and olive oil. In this recipe, tomato sugo, oregano, sugar and chili are added. This aromatic paste, the Sicilian version of pesto, tastes great on pizza and bruschetta, with pasta and grilled meat - pure Sicily.
