Locust bean gum

Carob bean gum is obtained from the pod-shaped fruits of the carob tree. The seeds from these fruits are dried and finely ground. The flour obtained in this way is used as a thickener and binding agent as well as a stabilizer for, for example, canned meat, sausage products, soft cheese or ice cream. Locust bean gum helps maintain the stability of whipped cream or cake fillings and binds liquids even when cold.
