Full-bodied, creamy, with notes of forest and spruce, and delicately bitter nuances. Mont d`Or is one of the last French seasonal cheeses. It is produced from August 15 to March 15 and then marketed from September 10 to May 10. Vacherin Mont d`Or is very easy to prepare: Make a cross-shaped incision in the rind. Heat the cheese for 20 minutes in a preheated oven at 180°C (convection oven), then grill for 5-10 minutes.
