Antonio - Aged Balsamic Vinegar from Modena has a strong yet balanced flavor, aged for at least 3 years in Carandini wooden barrels until the correct density is reached (1.34). Antonio offers an intense flavor profile and a persistent aroma. - Aged for at least 3 years in wooden barrels. - 80% cooked grape must - Density: 1.34 - Very rich and sweet - Persistent with wood aroma - High viscosity. Very dense and sweet, ideal for adding a special touch to dishes: risotto and fresh pasta, aged cheeses, red meats (tagliata, filet, etc.) - as well as for desserts such as panna cotta, mascarpone and ricotta cheese, fruit salads, vanilla ice cream, and even with dark chocolate. Antonio Carandini is the oldest ancestor found in historical archives. In a document from 1641, he is mentioned for his great skill in the production of Balsamic Vinegar from Modena.
