A fiber-like carbohydrate obtained through bacterial fermentation with Xanthomonas campestris, it has thickening and stabilizing properties (in emulsions). It thickens liquids both cold and hot and retains its viscosity even upon subsequent application at elevated temperatures. It also resists freeze-thaw processes. Stir in slowly and allow to hydrate naturally. The process can be accelerated by vigorous mixing or shaking, but this can trap air and impede the thickening process. Air can be removed with a vacuum pump.
(Xanthan / Xantan) Xanthan powder. Ingredient: Xanthan (E145). Fibrous carbohydrate obtained by bacterial fermentation with Xanthomonas campestris. Stir in cold and allow to hydrate on its own. The process can be accelerated by shaking vigorously and removing air. Very suitable for thickening cold drinks. The resulting texture is elastic and easy to swallow. Also suitable for stabilizing emulsions, binding gases and producing suspensions. Dosage: 2-5 g / l. Store in a cool, dry place, protected from light, tightly closed and out of the reach of children.
