Soy Sauce - Shoyu (Murasaki/Purple), Dark (Sandanshikomi), Shizen no Aji
In traditional restaurants, the term murasaki is used instead of shoyu. Murasaki means purple or violet. This is not only a poetic description, but it also sounds more polite, as it is an indirect expression. Dark purple is a sandanshikomi shoyu with a slightly syrupy consistency. Sandanshikomi refers to the three-phase fermentation process, which is also used for miso or sake. This longer fermentation gives the shoyu not only a darker color, but also a special depth of flavor. Excellent for sashimi and sushi.
