This shoyu represents the tradition of light soy sauces from the Kansai region around Kyoto and Osaka. Light shoyu is especially used in the elaborate kaeseki cuisine, where the colors of the ingredients should be preserved. Ideal for dashi broths and dressings, but also fantastic with rice vinegar and freshly ground pepper for gyoza and dumplings! Suitable for both raw consumption and cooking. Suehiro`s premium product. The Suehiro Brewery was founded in 1879 in the small town of Tatsuno, Hyogo Prefecture, considered the birthplace of light soy sauce.
