Dark soy sauce, made from black soybeans, Morita Shoyu
Brewed from black soybeans, a lower-yielding variety. Both the beans and the wheat come directly from Shimane Prefecture, Morita`s home province. The color, aroma, and flavor are very elegant, enveloping the ingredients like a fine olive oil and enhancing their natural taste. Very strong umami (amino acid) content. Brewing/Aging Time: 2 years in wooden barrels. Use: An all-purpose sauce for all dishes. Its subtle finesse is also ideal, for example, to round out a German pancake soup without making it taste too much like soy sauce. Morita is a soy sauce brewer from Shimane Prefecture in southwestern Japan`s main island of Honshu. Founded in 1903, Morita continues to brew exclusively with regional and Japanese ingredients, placing the utmost importance on quality and naturalness. For ponzu and dashi products, only basic ingredients like katsuobushi and kombu are used, and no extracts or similar substances. For Mr. Morita, this is a matter of course!
