 
        Freekeh (Farik, Frikeh, Firik) green roasted wheat, Abido
Freekeh is the Levantic counterpart to our green spelled, it is also harvested unripe (green), but is not spelled but wheat. So that the grain dries, it is roasted in a large pan over fire. This creates an aromatic, nutty taste. In the North African countries like Egypt and Morocco it is part of the basic equipment in the kitchen and can be used wonderfully in soups, stews, for salads and as a rice substitute.
