Sobrasada - smeared sausage, from Mallorca, Xesc Reina
Xesc Reina is one of Spain`s most renowned sausage makers. In collaboration with the Gebruder Company, he produces the finest sobrasadas and fuets from the Porc Negre (a Mallorcan breed of pig). These pigs live and are raised free-range on two idyllic farms in the center of the island (near Sant Joan and Maria de la Salut), feeding on carob, figs, olives, and only the grain grown on the property. The Porc Negre are raised there in separate groups according to age, amidst woods, orchards, and mudflats, living a wild and stress-free life. On the extensive lands, in addition to growing feed and grain, the paprika powder `Tap de Corti,` popular in the Slow Food movement, is also harvested. Sheep and cattle are also raised there. The Porc Negre are slaughtered at approximately 12-14 months of age. Their muscle meat is used to handcraft exceptional sobrasadas. Sobrasada is a typical Mallorcan specialty: spreadable and savory, made from finely minced pork enriched with Tap de Corti paprika and pepper, and stuffed into natural casings.
