Tokyo/Edo-style sushi is traditionally prepared with red sake pomace vinegar (aged for three years in wooden barrels). This subtly sweet blend is perfect for making aka-shari (red sushi rice). The Kisaichi Vinegar Factory, founded in 1922, specializes in sushi vinegar. Their various vinegars have been popular with Michelin-starred restaurants in Tokyo and Osaka for decades. All vinegars are traditionally brewed from Japanese ingredients and contain no additives. Their low acidity ensures that the sushi rice won`t become overly acidic. The natural amino acids in the vinegar enhance the rice`s natural sweetness.
