Umesu - plum vinegar
Japanese plum vinegar always has a relatively high salt content! This makes it perfect for quick pickles. Simply halve radishes or slice them thinly and let them marinate overnight in the refrigerator. This vinegar can also add a special touch to scallop carpaccio or white-fleshed fish. The Wakayama province is famous for its Japanese plums (or apricots), and this plum vinegar, with its fantastic plum aroma, comes from there. The distinctive pinkish-red color comes from red shiso. Red shiso not only colors the plums but also imparts a unique flavor. This exceptional quality has a beautifully rich, full-bodied umami taste and isn`t simply bland and salty.
