
Gum Arabic - Powder, Gelling Agent and Stabilizer, E414
Gum arabic is extracted from the sap of African acacia species. This natural additive is primarily used for thickening and stabilizing. In confectionery, it prevents sugar crystallization, in ice cream, it can control the undesirable formation of large crystals, and in fat-water mixtures, it stabilizes the emulsion. Gum arabic makes small baked goods, such as cookies, long-lasting and beautifully shiny.
