
Fish sauce, dark, Red Boat, Vietnam
Fish sauce is widely used in Thai and Vietnamese cuisine. To make it, small anchovies are left to ferment with salt for several months. The resulting liquid is then withdrawn and poured back on. The fish now mature again in wooden barrels for several months. Our tip for a dip: 1-2 red or green chili peppers, 1-2 tablespoons sugar, 2 tablespoons lime juice, 4 tablespoons fish sauce.
