Buckwheat noodles are called soba in Japan and are widely available there. They are made from wheat flour and buckwheat flour from Japanese farms, along with salt. They have a short cooking time and only need to be cooked in boiling water for about 4-6 minutes. They are an ideal accompaniment to numerous Asian dishes.
