
Spaccatella, halved date tomatoes in their own juice, Viani
A canned food can hardly taste fresher. Apulian date tomatoes are halved and placed very close together in a glass. Add a little salt and a few fresh basil leaves. Then the glass is closed and sent into a tunnel with steam at around 90 degrees. The tomatoes are in their own, bright juice. You can use them like fresh tomatoes, for pasta, in soups, on bruschetta, in frittata and on pizza.
