Fish sauce is used extensively in Thai and Vietnamese cuisine. To make it, small, protein-rich fish are left to ferment with salt for several months. The resulting liquid is then removed and poured back on. The fish now mature again in wooden barrels for several months. Our tip for a dip: 1-2 red or green chili peppers, 1-2 tablespoons sugar, 2 tablespoons lime juice, 4 tablespoons fish sauce.
