Fish sauce, dark, Squid Brand

Fish sauce is widely used in Thai and Vietnamese cuisine. To make it, small, protein-rich fish are fermented with salt for several months. The resulting liquid is then drawn off and replaced. The fish are then aged for another several months in wooden barrels. Our tip for a dip: 1-2 red or green chilies, 1-2 tablespoons of sugar, 2 tablespoons of lime juice, 4 tablespoons of fish sauce.
