These blue-black globose, pea-sized berries are botanically the small cones of the juniper shrub. Due to the content of resin and essential oils, they have a typical needlewood smell. Its spicy, sweet-bitter taste is particularly appreciated in the kitchen for sauerkraut, for seasoning game dishes, wild ragouts and sauces, hunter soups, braised meat, pies and marinades. Likewise, juniper berries are an important flavoring ingredient of gin.
