The Tasmanian pepper is botanically seen not a real pepper, but the berry fruit of an evergreen wood, which occurs mainly in Tasmania. The leaves and berries of this plant are aromatic like pepper. The dried black berries are used in typical Australian specialties, such as emu hamburgers and kangaroo steaks. They taste a bit sweet and then very spicy at first, but the sharpness does not last very long. How to use: marinate pieces of meat with a bit of Tasmanian pepper and oil and roast or grill for a short time. Freshly crushed peppercorns also season stewed foods and lightly color pink sauces. Long cooking is not recommended. The berries are best processed in a mortar.
