The light mustard seed is known as a spicy ingredient for pickled vegetables such as pickled cucumbers. It is also used to make food from it. Whole or freshly ground the mustard seed is a pungent spice for poultry, stews, many sauces, beans, lentils, sauerkraut or celery. The mustard should not be cooked, but added last. Since mustard seeds contain emulsifiers, mustard, in addition to the taste, also improves the stability of emulsified sauces.
