Green pepper is harvested before the actual ripening and either placed in salty or acidic sheets or dried quickly at elevated temperatures or in a vacuum. By this type of treatment, the fermentation and thus the discoloration of the pepper berries are prevented. Green pepper has a low sharpness and a fresh, herbaceous and green taste. The dried peppercorns, such as black or white pepper, can be freshly ground in mills or crushed in a mortar. With this pepper grilled meat can be seasoned.
