Licorice is mainly known as a raw material in licorice production. Its aroma is reminiscent of anise or fennel, but it is stronger. The taste of the root provides great sweetness and warming. As a spice, licorice is not so easy to use for sweet and spicy foods. Carefully dosed, it goes well with Sichuan pepper, star anise, cloves, coriander seeds, cassia cinnamon, ginger and fennel. Try licorice in dessert creations or with a pinch of fish fried in butter.
