Lecithin is a herbal emulsifier derived from soya lecithin and is excellently suited for the preparation of foams. It also has amazing properties as a sauce binder for `hopeless cases. Lecithin is very rich. Already a lecithin addition of 0.6% of the weight of the liquid results in a stable foam, ie use about 6 g of lecithin per 1 kg of liquid. For alcoholic media, lecithin is less suitable for better use of SucroAir. Lecithin is soluble in cold liquids. It is highly water soluble, but loses effectiveness in fatty media.
