Mirabelle plum puree / pulp, finely strained
Mirabelles are in the stone fruit family to the large group of plum species. Since the 15th century, they have been distributed in France and since the 18th century in Germany, Austria and Switzerland. The fruits are ripe from mid-August and are spherical, orange-yellow and dotted red on the sunny side. The pulp is sweet to fine spicy, firm and not very juicy. Mirabelle puree is simply delicious for tarts, pastries, desserts or ice cream.
