Fish sauce, light, Oyster Brand
Fish sauce is an essential ingredient in Southeast Asian cuisine. Small, protein-rich fish are fermented with salt for several months. The resulting liquid is then drained off, and the fish are aged again for several months in wooden barrels. The resulting sauce is used extensively in Thai and Vietnamese cuisine. For a dip: 1-2 red or green chilies, 1-2 tablespoons sugar, 2 tablespoons lime juice, 4 tablespoons fish sauce.
