Fish sauce is an indispensable ingredient in Southeast Asian cuisine. Small, protein-rich fish are fermented together with salt for several months. The resulting liquid is then withdrawn and the fish mature now again for several months in wooden barrels. In the Thai and Vietnamese cuisine, the sauce so obtained finds plenty of use. One dip: 1-2 red or green chili peppers, 1-2 tablespoons sugar, 2 tablespoons lime juice, 4 tablespoons fish sauce.
