Cocoa butter, block
Cocoa butter is the pressed fat extracted from ground cocoa beans. It is obtained at temperatures between 70°C and 90°C. The finished cocoa butter is light golden yellow and clear in its liquid state. It is then hardened and sold in blocks. This 100% pure cocoa butter has a mildly aromatic scent and a slightly cooling taste. It is produced entirely without the use of additives, processing aids, or preservatives. It is used in the production of chocolate, melting chocolate, and couverture.
