They are the seeds of clay custards, originating in northern South America and increasingly finding their way into the private gourmet kitchen: the Tonka beans. In the kitchen, the tonka bean is mainly used in desserts, often just like rubbed. Tonka bean powder can be processed in a variety of sweet dishes - as an ingredient in ice cream, yogurt, chocolates or creme brulee, in various baked delicacies such as souffles, cakes or cookies or as a smart secret ingredient in tomato sauces. The tonka beans can be used very well as a vanilla substitute in all recipes that require vanilla. However, the most important thing is to use the Tonka bean and its powder sparingly, as it is often warned of side effects in too high a dosage.
