Behind the pasta specialties of the ancient pasta manufacturer Morelli lies a very special ingredient, one not typically found in conventional pasta: wheat germ. Normally, this is separated from the bran during milling. At Morelli, however, this nutrient-rich component of the wheat is added back to the bran after milling, resulting in pasta with a firm texture and intense flavor. For over 150 years, the traditional Morelli company has been producing the finest Italian pasta by hand, adhering to the highest quality standards. To this day, the company remains one of the most respected pasta manufacturers in the country. In the production of their classic pastas and creative flavored pastas, they forgo all preservatives and colorings; everything is natural and produced with great care. The dough, made from the highest quality durum wheat semolina, is rolled by hand and dried for 36 hours at a low temperature.
