The cocoa for Callebaut Origine chocolates comes from regions of the traditional cocoa-producing countries along the equatorial belt. The Forastero variety, imported from Brazil, originates from the chocolate island of Sao Thome. The resulting dark chocolate, with 70% cocoa, has an enormous cocoa concentration. Its aroma is slightly spicy, with roasted notes and cappuccino impressions. The taste is initially pleasantly delicate - bitter, full, and fruity, with notes of candied fruit. This is followed by floral impressions and a coffee bean aroma. Subtle oak notes on the finish. Uses: For glazes, for decorating and flavoring, and for filling pralines.
