Around 35 pumpkins have to be processed to produce 1 litre of pumpkin seed oil. The seeds are finely chopped and processed into a soft, deep green, sticky but intensely fragrant pulp. Hot water and salt are added to the pulp. The water transports the necessary heat and the salt seasons and separates the protein in the seeds from the oil. The kernel mass is then roasted at 80°-90° so that the water evaporates and the protein becomes solid. The dark green oil can now be pressed from the kernel mass, with the heavy impurities slowly sinking naturally. The intensely nutty pumpkin seed oil goes well with soups, beans, egg dishes, in pumpkin seed pesto, with salads and with desserts such as high-quality vanilla ice cream.
