Golles Balsam - Apple Cider Vinegar, matured for 8 years, 5% acidity
Balsamic apple cider vinegar is made from highly aromatic apples of old Styrian varieties such as Maschansker, Ilzer Weinler, Rosenapfel, or Bohnapfel. The carefully pressed juice is boiled down using traditional methods, and the vinegar is aged for at least eight years in small wooden barrels. Even after this long maturation period, the vibrant fruit flavor of the apples is present, yet elegantly concentrated and integrated into a complex flavor profile. It harmonizes beautifully with fruit-forward olive oil, as well as with Styrian pumpkin seed oil. Just a few drops of this precious essence lend savory dishes a sophisticated touch. Excellent with terrines, aspics, fresh cheeses, salads, carpaccio, and creamy desserts.
