Verjuice from the Perigord
A must made from unripe grapes, with a mildly acidic flavor. Ideal for fish and rabbit sauces as a substitute for lemon, for game, poultry, and wild boar marinades, in vinaigrette sauces for deglazing, or as a refreshing splash in sparkling water or cocktails. Verjus du Perigord is considered an old French specialty with a lingering grape juice flavor and a subtle hint of gooseberry. Refrigerate after opening.
