For the production of inverted spheres (bubbles). Inverted spheres (calcic in alginate) are suitable for all foods with an increased calcium content, such as feta or mozzarella, because they give you a much better mouthfeel and a much better bite than normal spherification (alginate in calcic ) creates! Gluconolactate is cold-soluble.
