This loin is marinated with salt, sugar and black pepper according to traditional recipes before being stuffed into natural casings and gently aged in special drying rooms for around 3 months. This lomo is made according to a traditional recipe by the company Embotits Casolans de Planoles, which has been producing handmade sausages since 1920.
