Tapioca is a starch made from the roots of cassava that has been pressed into pearls. It is a popular binder for thickening desserts. The pearls are much easier to handle than flour. Put the pearls individually in flowing water or sauce (fruit) - do not stir. Then simmer slowly for about 15 minutes. If you want to have the pearls individually, take them out of the stock after cooking and put them in cold water or juice.
