This single-varietal extra virgin olive oil is made from Picholine olives hand-harvested in early November. Its aroma is intense and bitter - peppery. The flavor is very distinctive - an absolute flavor enhancer. It complements the natural flavor of spring vegetables. Recommended with fish carpaccio and beef tartare with a squeeze of lemon. Perfect for sorbets and ice cream.
