Fish sauce, gluten free, mega chef
Fish sauce is widely used in Thai and Vietnamese cuisine. To make it, small, protein-rich fish are fermented with salt for several months. The resulting liquid is then drawn off and added back in. The fish are then aged for another several months in wooden barrels.
