Olive Taggiasche sott`olio, Taggiasca olives in olive oil, Olio Roi
Our probably finest dark olives, small, hand-picked Taggiasca olives in varying shades of gray-beige to dark brown. After harvesting, they are stored for six months in brine in old Barolo barrels to remove bitterness. The wine barrels also impart a subtle sweetness. Afterward, they are pitted and preserved in the finest olive oil. Their flavor is spicy and nutty.
