How do you store fresh truffles?

Like any herbal product or mushroom, the fresh truffle has a relatively short lifespan: only about 10 days to retain its flavor. After this time, it is advisable to consume it as quickly as possible. If you want to preserve the fragrance, this will be done through one of the following preservation methods:
in the refrigerator in an airtight container (glass or plastic) individually wrapped with a sheet of absorbent paper or covered with rice. This rice can then be used to make a truffle risotto.
If you want to process the truffles with eggs, it is advisable to store the truffles and eggs in a closed container for one to two days before processing. So that the eggs are impregnated with the aroma of truffles. The scent of the truffles, for example in a truffle omelet, will be even stronger.
In the freezer: freeze in a jar or container, this is the easiest solution to keep the truffle longer (maximum 1 year).
Another trick is to make truffle butter and freeze it.

How do you choose good fresh truffles?

Perfume: It must be pleasant to the nose
Ripeness: One must check the truffle in terms of color and flesh (black dotted with white veins).
Firmness: the truffle should be firm, not too soft and not too dry to the touch
